One of the minor pleasures of New Zealand was the Flat White. It's essentially a cappuccino, but with a finer, creamer foam and a stronger mix than you get in Britain. I've missed them, but I may have found an alternative source...

The unlikely caffeinated beverage dealer turns out to be Starbucks, of all the baristarers. They have a secret product, called the 'Short' Cappuccino, which is smaller than the smallest size on the actual menu, the 'Tall'. The BBC has a article about it, explaining why Starbucks wouldn't advertise it's best product. Most of the coverage I've seen is about the U.S., but apparently you can buy one in the UK too. I don't go to Starbucks much these days, but whenever I do, I'll see if they can deliver a flat white.

Indeed, I can confirm that Starbucks will sell you a 'short' if you ask. I have done it several times since reading about it in Freakonomics (I think).

I have been dabbling with the Americano (ie. regular espresso with hot water!) and milk... it may not be fancy pants, but it is consistent and can be made at home using a Moka Express.

The 'folding the milk layers' is certainly true too -- if you have the luxury of a coffee machine with steamer at home then the trick is to do the milk first. Leave it to 'crust off', then fold the crusty bit into the bottom bit a few times with a big spoon. If you get it right you can achieve the magic consistency but some coffee shops must have an extra trick as I have never quite got it super funk.

I might dig out my Krups and give it a go. I did manage to order a 'short', and just blogged about it without realising you'd already commented. I'm looking forward to a nice flat white whenever we next visit you. ;-)
